Easy Week Night Tomato and Roasted Pepper Soup
Need an easy week night recipe? Use 1 container of Trader Joe's Roasted Pepper and Tomato soup, 1 container of Trader Joe's eggplant and pepper spread, and your choice of protein (chicken, beans, fish, etc) and veggies. Saute the protein and veggies in 1-2 teaspoons of olive oil (I used cubed chickend, 5 roasted garlic cloves, 3 chopped heirloom tomates and 1/2 bell pepper) until cooked through. Add the soup, eggplant spread, fresh oregano, sea salt and fresh cracked pepper. Stir until soup is warm. It will make 5 hearty servings. If you're a weight watcher member, it's 4 points per serving.
