Ingredients:
- 1 cup loose Polenta (I bought the Golden Pheasant brand from Safeway on Tassajara Road and Dublin Blvd.)
- 1 cup flour
- 3 tsp. baking power
- ½ tsp salt
- ¼ cup walnuts or pecans (optional)
- 2 mashed Banana’s
- ½ cup Reduced Fat Buttermilk
- 1/4 cup brown sugar
- 1 egg
Directions:
- Pre-Heat oven to 425 Degrees.
- Combine all ingredients in your mixer and mix on a low speed.
- Pour into muffin tins and bake for 22 – 25 minutes
- Makes 12 muffins
