Banana Walnut Polenta Muffins (4 Points on Weight Watchers)


Ingredients:
  • 1 cup loose Polenta (I bought the Golden Pheasant brand from Safeway on Tassajara Road and Dublin Blvd.)
  • 1 cup flour
  • 3 tsp. baking power
  • ½ tsp salt
  • ¼ cup walnuts or pecans (optional)
  • 2 mashed Banana’s
  • ½ cup Reduced Fat Buttermilk
  • 1/4 cup brown sugar
  • 1 egg
Directions:
  • Pre-Heat oven to 425 Degrees.
  • Combine all ingredients in your mixer and mix on a low speed.
  • Pour into muffin tins and bake for 22 – 25 minutes
  • Makes 12 muffins
